Salmon Loaf

Serves 2

Ingrédients

  • 1 can (200 g) salmon with bones
  • 1/2 cup (125 ml) chopped raw mixed vegetables (onions, celery, broccoli…)
  • 1 can (10 oz/284 ml) cream of mushroom or cream of celery soup
  • 2 tablespoons (30 ml) lemon juice
  • 1 egg
  • 1 cup (250 ml) corn flakes

Mode d'emploi

  1. Preheat oven to 350°F (180°C).
  2. Grease a 9 x 5 inch (23 x 12 cm) loaf pan.
  3. Drain salmon.
  4. Mix all ingredients in a large bowl.
  5. Press mixture into greased loaf pan.
  6. Bake for 35 minutes.

NOTE: To increase the iron content of this recipe, add 1/2 cup (125 mL) baby cereal (with added iron) and 1 more egg.
